I do not have your answer. I could take some guesses as the interior panels may be of similar construction as the interior door panel construction. Finding a used replacement is not going to be easy. I did a quick search on the net and there are not many of these out there. The few I found had about the same condition of interior as yours.

You will likely have to have interior pieces made.

My suggestion, get an original sales brochure or other literature.
From there you will at least have pictures of patterns.

There will be a warranty plate with the serial number. May have an interior trim code as well.
The codes can be decoded with a shop manual

That is likely a true statement.
Finding that someone may be a difficult task.

My understanding in the entire universe of 63 Sedan Delivery vehicles there was less than 150 made.

And the entire universe of all first gen Falcon sedan delivery vehicles is less than 5000 unitst.

After looking at more of them on the web, I have yet to see one in unmodified stock condition.

These were built to use in business. So you may have the best low mileage original.

I gotta believe that you restore your copy to original stock condition, it would be rare and have some value.

Would love to see you do that! And document it here, If you are up for it.

I have looked at a few of the above part numbers for interior pieces and all of them are black.

The base part number for the front floor covering (-13000-) either mat or carpet, only lists a mat for X body. (Falcon) And it is in only one color. BLACK

And a minor detail which may be low on your priority list of things to do, the outside rear view mirror is not correct.
The correct one would have had a round head.
